Freshly prepared Crab Cakes
Extra Virgin Olive Oil
Sonoma Mission Organic Corn Tortillas
Local Organic Greens
Hass Avocado
Feta Dressing-or dressing of your choice
Garnish suggestions: caper’s, red onions, cilantro, mango

I bought a couple of ready-made crab cakes from Whole Foods Market.  These crab cakes are made in house with fresh local crab from Bodega Bay, and vary with their ingredients depending on what’s in season.  If you have food sensitivities you may wish to make your own crab cakes, though I find the fresh house made crab cakes available at my local groceries beautifully prepared, easy, and effortless and delicious.  This recipe takes less than 15 minutes to prepare.

In a fry pan, I drizzle a tablespoon of EVOO warmed  on a low burner, add the crab cakes, cover with lid and sear for two minutes on each side.  You’ll notice a crispy, crunchy outside with all the flavors seared in. I love the Organic Sonoma Mission Handmade corn tortilla’s which I quickly grill over an open fire on top my stove as the crab cakes are settling.

Afterwards, I spread a thin layer of creamery feta dressing on the tortillas, topple some local greens while placing the crab cakes a long side.  I drizzle  more dressing on the crab cakes, dress with a teaspoon of capers, mango,  red onions, cilantro. I pair this nutritious dish with some sliced avocado, and mango if available. Rice is always a wonderful side.

Easy to prepare, fun to make and is delicious as well as healthy.  Your pallet will delight with the many textures, flavors, and colors in this seafood fare dish gone Spanish style with a slight Mediterranean twist.  Enjoy!
